Jessica’s Mushroom Tortellini

Tried this soup over the weekend and it’s pretty friggen amazing. Here’s the ingredients:

  • 2 cans diced tomatoes
  • 4 cups chicken broth
  • 8oz cream cheese
  • 20oz cheese tortellini
  • 3 cups fresh spinach
  • 1 package of Mushrooms!

In a slow cooker, mix everything but the spinach. Use whole mushrooms or dice them up, whatever you feel in the moment.

Cook for about an hour. The last 30 minutes is when you put the spinach.

Everything should blend pretty evenly.
